Double Chocolate Cookies with Holiday Spiced Pecans Recipe PLUS Enter Our December Giveaway!

There is just nothing like a good holiday cookie.  I mean, I'm all for green juice, veggies, and superfoods most of the time, but during the holidays....well let's just say I want COOKIES. Specifically CHOCOLATE cookies.  Don't get me wrong.  Sugar cookies, cut out in the shape of bells and Christmas trees and decorated in red and green, are super festive and fun to make. But if I'm picking a cookie to eat, and I'm going to splurge, I want something fudgy. Gooey. Chocolatey.

So if you know me or have read any previous posts on the Radiant Blog, then you know that I am gluten free.  So what's a gluten free girl who is craving gooey chocolate cookies to do!? Sometimes, ya just gotta make your own way.  And your own gooey-ness.  So I was thrilled when Pamela's Products reached out to me and said they were doing a "12 Days of Gluten Free Cookies" campaign, and they wanted me to participate as a blogger and cookie creator!

What does that mean? Well, I got to come up with my own recipe using their Pamela’s All-Purpose Flour Artisan Blend (which is amazingly versatile, and of course gluten free!).  Naturally I created something super chocolatey, and with just a teeny bit of spice for warmth.  As an added bonus, they can be made vegan as well!


These cookies have a little of everything...a little gooeyness, a little spice, a little crunch from the pecans, and whole lotta chocolate.  They passed the taste test from even the most discerning (and pro-gluten) cookie critics!  So you can feel confident these little lovelies will be a crowd pleaser with whomever you choose to celebrate with this season!  ( don't even have to tell them they're gluten free - Pamela's flour is so good, they'll never be the wiser!)  See full recipe below.
